What is coconut oil?

Coconut oil is a vegetable oil. It is a fatty substance containing about 90% saturated acids extracted by pressing the flesh or meat of coconuts. Due to its high saturated fat content, it is slow to oxidise and therefore resistant to rancidity, lasting up to six months at 24°C without deterioration.
