The olives are washed, disinfected and packed in a brine solution composed of water and salt, with a slight addition of citric acid and lactic acid to maintain a stable pH and ensure optimal preservation. Once packaged, the containers are hermetically sealed and undergo a thermal sterilisation process, ensuring the microbiological stability of the product and preserving its organoleptic properties. This careful preparation results in an olive with an intense flavour, firm texture and exceptional quality, ideal for direct consumption or as an ingredient in various culinary preparations.

Storage
